This time, I'll be playing in Hard mode…
Any recommended/must-have mods or similar?

You can try the full combat rebalance (http://www.moddb.com/mods/full-combat-rebalance1).
Comes in two flavours and very difficult.

Yeah, I found that - but I'm unsure if I really want the game to be more difficult - since I just want to experience the story, and I'm playing on hard this time.

You can try the mod for 1-2 hours.
Easy to install and easy to uninstall. :D

AFAIK the Enhanced Edition organizes the inventory and makes it easier to use than the original,I don't remember how exactly it worked but it shouldn't be that much of a hassle now.

There is a "Well Stacked Mod" which ups stackability of stackables to 999, however I couldn´t find standalone version compatible with EE anywhere, so
I think you´ll have to download the above mentioned Full Combat Rebalance for that - the mod is part of the package. FCR´s installer lets you choose what you want to install so you don´t have to install anything else from it, though checking "No Logo Movies" shouldn´t hurt :).
There´s also Alchemy Ingredients Icon Mod which makes alchemy a bit more hassle-free. Here´s a description: http://witcher.wikia.com/wiki/Alchemy_ingredient_icons_mod

Other than these, I only used First Person Enabled Mod (http://www.thewitcher.com/forum/index.php?topic=9696.0) cos I generally prefer first person view in these types of games. You can easily switch into TPP via mouse wheel for combat, though you don´t necessarily have to.
There´s a tiny drawback in it - after zone transition Geralt is facing down instead of straight ahead - which is easily solved by editing the mod´s only file in notepad. (change the part "4 TPP 5.0 140.0 0.0" into "4 TPP 5.0 140.0 -0.1").
All in all, I don´t think there are any real must haves for The Witcher, but these three certainly made my game more enjoyable.

TW2 is looking mighty promising, so I simply MUST play this through :)
