I have 2 Strength + 5 potions, can you use these once you are ay 100 strength to go past 100? Or is it capped at 100? Same for amulets. Never had so much fun in a rpg ina long time just making potions, finding ingredients and making amulets and rings using smithing.

Yes you can, so the best thing to do is get 100 strength through training, and then get far above that with strength potions.

This the same for amulets to? They go past 100?

They do indeed. You can get 200ish Strength or so I think from potions/items, and an extra 50 from the Berserker spell.
Also, eating 10x Apples will give you 1 Strength. This works up to 5 times as far as I know.

Eating eggs also gives strength bonuses.

I just confirmed it in-game: 200 Strength is the highest amount of Strength you can get, with or without items/potions/etc.
However, the spell "Berserker" will still affect you, and increase the damage done, so that will effectively take you to 250 Strength, though the character screen will not show it.
