WRT to the UI, I think the tools in vanilla Unity are pretty dismal compared with what's available in the toolkits I use professionally. However, I've heard some good things about the NGUI plug in and have been meaning to take a look at it: It's available in the asset store and what's nice is that you can get a free eval.
