Fallout: New Vegas - PC Version Patched

There are many people with crash issues, and you can try a lot of tweaks to the ini file.

If you're using a multicore processor (which you probably are) - you can try forcing the number of hardware threads to 2 - which has helped a lot of people.

Also, if you have an external sound card - you can try disabling it, to rule it out as a cause.

But there are literally dozens of suggestions that have helped all kinds of people with serious issues.

I'm not at home, so I can't get you the details for the tweaks, but you can Google for them.
 
I had major issues with freezing in FO3 in Win 7 64bit, until I did the multicore fix.

If you want to try it, I assume the steps would be the same for FO:NV...

Open up the fallout.ini file in: My Documents\My Games\Fallout3
Find the line:
bUseThreadedAI=0
change it to:
bUseThreadedAI=1
Add another line after it and insert:
iNumHWThreads=2
This will limit the game to 2 cores and prevent the engine bug from causing the game to freeze.
