Having not played a TES game since Arena,I am becoming seriously interested in Skyrim!
I'd be grateful if someone could answer a few questions for me.
Can you save when you want?
Can you have as many savegames as you like?
Can you name your savegames?

Yes. Thankfully they haven't become that consolified yet.
Yes, as far as I know, but there may be some unknown upper limit.
No, you seem to be stuck with the same genero-save as in other recent Bethesda games.

You can name savegames through the console (that's what I do). I hate it when I can't name my games, especially in an rpg. It's not that hard to implement.
To name a savegame in any bethesda game, bring the console up (by pressing ~)
and type: 'save (name of the save)'. Note that you can't use spaces if you want multiple words in your save game name file.
For example you can type 'save Skyrim' The savegame would be named Skyrim
or 'save New_Beginning' and the save would be named New_Beginning.

And you know, that's probably easier than using the kludgy UI.
