Err, no. Sim not as "Sims", but as more realistic gameplay simulation where environment, physics and direct player actions allow more interaction.
I guess I draw the line at Dishonored. There's absolutely nothing realistic about its physics. I guess I disagree with the part of your definition that includes player interaction. I liked it better when they said Dishonored had "emergent gameplay." That is a much-better description. I agree the player can find many different ways to approach a problem, and the game world encourages this. However, the game world isn't simulating anything.

I can't say I see this game as a "turn off"; but can definitely say I currently fail to see a "turn on" in what I've seen so far. From what I understand an 'immersive sim' involves a large, enjoyable, learn-as-you-go, environment. So that's how the Deus ex's and Dishonoreds of the world fit in. Got to learn the envrinment, and interact with it.
So OK.
But where I have problems is when the interaction is nearly all with the environment; and not with people -- persons -- humans. Without the latter, I can't see how my PC can have or develop any sort of a personality -- the latter simply requires other people as I see it.
Interact with a strange spaceship environment -- I can see how the puzzle aspects could definitely turn on lots of folks. It just ain't doing a lot for me at the moment.
