Earlier posters have mentioned the ones I can think of. Of these, I'd probably say I miss Sir-Tech the most, with Troika as the runner up. Sir-Tech because we have no worthy successors to neither JA2 nor Wizardry 8 in my opinion, and I love both those games.Troika because no other RPG developer has pushed the boundaries quite as brilliantly. Although flawed technically, I find both VTM:B and Arcanum to be two of the greatest and most innovative games I've played.
If I'm talking about what developers whose games rate highest to me I would say Black Isle. But unlike with Wizardry and JA, I feel the games I enjoyed most from Black Isle have (FINALLY!!!) gotten not one but two great successors this year in PoE2 and PF:KM, so that torch is once again lit and held high. The same goes for Microprose, since I enjoyed both the new XCOM's and am really looking forward to Xenonauts 2.
Honourable mentions go to NWC/3DO, new iterations of Homm and MM are sorely missed in my gaming library. The Ubi Homms doesn't count.

I wonder when we'll hear from Levine and Ghost Story Games. I'm really curious if they can pull off that "lego" narrative game they've been talking about.
I can usually come up with solutions for most design problems in my head (which is, of course, not that hard) - but I've yet to come up with a solution for the problem at hand.
I'm going to be very, very impressed if Levine and his team can truly make this work.
