You can't pause in single player which is insanely annoying.
Otherwise it's a seriously good game, even just SP. It has content somewhat similar to Valheim in that some progression is gated behind killing bosses, which is good IMO because it gives you PvE goals.
Excellent production values, fun mechanics, excellent living map, it's immediately enjoyable to play. Great graphics, animations, and combat.
It's EA but feels like it's production worthy now. I've yet to have any bugs or issues. Loading times are kind of long since it's a client/server arrangement even locally ala 7DTD (I'd guess) but game is super smooth once you're rolling. (It is intended for co-op/MP and that probably has its share of release issues - not a concern to me though)
You are getting a LOT for you $20 with this game.

I like a lot of what I've read on this one, though not being able to pause in the single player version seems like a bad call to me. I'll keep an eye on this one and, once it's done with the early access phase, see what I think then. I do like a decent vampire game and much of this reads like it would be fun to play.

All I see is combat. Is this basically just a Diablo clone where you play a vampire?

It's a very fun game. There is a lot of combat to be had, but it's less brainless than a Diablo-clone due to the blood mechanics.
On pausing, you need to lay in your coffin as a proper vampire, than the game is in a sort of pause mode (you can't be attacked, you don't loose any blood, etc).

Looks very similiar to a recent phone port to PC game called Vampire Origins. I'm probably imagining things. Still it's an MMO and I don't play many of those nowadays.

Vampire origins is a very different game, also fun but not the same (apart from walking through the world in isometric view), the combat is a 2d turn-based affair in that one (with some nice animations).
V Rising has the option currently to play on a private server where you can adjust various aspects with sliders (gathering rate, etc). One of the upcoming releases will add offline play. So hang in there Couch!
