Someone knows how to dispell summoned creatures? Is it possible?

Yep, just talk to them and say "go back now", and they'll die.

I know… but I can't dismiss it during a fight, the peoples attacks my skeleton on sight, and would be good to dispell it if he is attacked by the wrong people

Ah, no, there is no way to dismiss him if he's fighting. That's why you should never summon anything near anyone friendly, only near people you want to die.
