Daggerfall: Get cured from being a werebeast by sacrificing a child … and live with the hate of the locals ever after.
Morrowind: Flush a house you fancy, collect all the candles and lanterns you can get hold of and decorate the roof of your new house with it. Coming home never was so romantic.
Lands of Lore 3: Wait for the credits to finish. The game will continue afterwards, and in a rather satisfying way at that.
Oblivion: Be sure to follow Audens Avidius around after you got the witnesses to testify against him in the 'Imperial Corruption' quest. You might be astonished, but some Oblivion side quests are pretty nice!
Arx Fatalis: It's the little details that make the Arx experience so great. Your co-prisoner in the beginning? See and remember his tattoo … and you will certainly start to tremble a little later in the game.
The Lands of Lore 3 reminded me of Nehrim. Make sure if you play and beat Nehrim, stay put through the credits. You will be very happy to see what happens next and experience some of the post-ending content.

Oblivion had some awesome NPC schedules and the like. There was also that quest in Skingrad to follow people and see if they were conspiring against the wood elf. It was basic stuff, but even years later when I played the game again I thought how cool it was just to see the people walking around, going to their job on the farm, taking a break, going back around town, etc.
IMO, Elder Scrolls could really use some larger cities that aren't so boxed in. Imperial City size for all the towns could be really cool. The size + population of Imperial City makes it a lot of fun to explore. Not just randomly ransacking various houses, but meeting people in the streets, at the taverns, etc. Some of them are trainers, or have little unique stories, etc. Love it!

Using levitation spells in Morrowind felt AWESOME. Probably the most memorable thing for me in the game.

Oblivion: Get thrown in jail, punch your cellmate in the face, escape while the guard comes in and beats the snot out of your cellmate.
Ultima 7 Part 1: Learn how to cheat at the casino in Buccaneer's Den. Fill your ship's hold to max capacity with your ill-gotten gold. Also: With Iolo in your party, break into his shop in Britain and steal everything. Everything.
Gothic: Attempt to not be mean to Mud. Fail miserably.

Diablo: Meet the Butcher for the first time.
Diablo 2: Exploring the jungles of act 3 and Hell in act 4. Both were memorable to me. But maybe the most memorable was just watching all of the cutscenes between chapters. Mephisto's monologue is my personal favorite.
Ultima 8: Finally getting across those damn stone platforms in the water.
