Yes, 2-3 of these stretch goals may be more resource intensive than the funding increment. They might have been overly optimistic in their forecast, so it won't surprise me to see them getting cut back later on.
Some also seem to be less than what they asked for (like the goblin companion) so I guess it evens out.

Which ones? Only one I can think of is the additional story content that will take players to lvl 20.

Well it depends. The Archetype goal seems like there could be a lot of unique coding to make it work with the potentially new ability additions, so I'm guessing that could take a chunk of time. New companions does not need a lot of art as well and most of the game will not be voiced.
New story chapter will be more effort but they can probably do that last when they are practised and got lots of assets to work with so they will be more effective.

If you checked out their graph most of the money goes on art. Archetypes need little art.

Lacking other info we can assume they are going to keep to their current workflow and expenses should be simialar.
