If you think you lose immersion from that then you've obviously haven't played the Lost Crown.Like The Saboteur (looks a lot nice than Lost Crown, imo). Not a big fan of that, to lose immersion for something that looks like a MTV music video, not my cup of tea.
And since you mention that.
I don't really see why one considers colors or 3d first person view as necessary to achieve immersion.
I've been very successfully and completely immersed in books, silent films as well as old isometric DOS games and platformers. As I see it, if it's well made it will be immersive no matter what, if it's not well made all the colors of the rainbow won't save it.
